We do a lot of cooking in my house. My husband loves cooking. I don't particularly care for it but it's in the job description. I'm the menu planner and photo taker for my company so I'm often throwing together meals just to get a nice photo to post on our website. I let my chefs take care of the making everything taste amazing.
Even though I don't care to cook much, I still prepare fresh dinners at home an average of 2-3 times per week. The rest of the time we are either eating prepared meals from my business or my husband is doing the cooking. Sometimes though, I find a dish that I just feel like pouring my heart into, usually because I'm really hungry and I want good food. This was one of them and it was oh-so worth it!
This recipe calls for chicken thighs and while I'm usually not a fan of them (I'm the pickiest meat eater ever) you're going to want to use them. You are going to get the chicken nice and crispy and if you're using breast, it will dry out and you won't get that traditionally delicious street cart texture or flavor.
Street Cart Chicken: Serves 4
Once everything is complete, place chicken, romaine, and rice on a plate and top with diced tomatoes and sauce.
